Terroir and Vineyard Management
Arid, stony, clay & limestone soil. The vines are farmed biodynamically, certified by Demeter. The earth is ploughed and there is no use of fertilizers.
Yield
28 hectolitres/hectare.
Harvest
Morning hand picking only into small open crates.
Vinification
After hand sorting on tables, the grapes are gravity fed into vats. No yeast is added. Traditional vinification with alternate cap immersion and pumping over. Four to Five weeks’ maceration. Pneumatic pressing.
Maturing
10 months in stainless steel vats.
Production
Averaging 16,000 bottles.

Tasting notes

Eye
Deep ruby red.
Nose
Highly aromatic and intense, often featuring notes of cherries, ripe red berries, and black fruit, with subtle hints of licorice, baking spices, and wild herbs.
Palate
Medium-bodied, fruity, and fleshy, with a "juicy" mouthfeel. It is known for its delicate texture, "silky substance," and well-integrated fine-grained tannins. Finish is savory, peppery, and flavorful.

Service and pairing
Serve between 15 and 17 °C best with grilled red meat.

Alain Chabanon

Alain Chabanon has established his winery in Languedoc in 1989. His domaine, producing on average 5000 cases per year , is now recognized to be among the top 10 in Languedoc-Roussillon.

The respect for the life in the soil is Alain’s first priority: The estate has been organic since 1992 and has adopted biodynamic principles in 2011 . Yields are kept low and the soils are ploughed.

The work in the cellar is admirable too: long ageing in old oak barrels or in concrete eggs for its top cuvees. Alain aims to produce exceptional wines that are subtle and elegant, with a true identity of their terroir ; Wines that would become even more complex after several years but that are delicious young.
