Terroir
70% granite 30% clay-limestone.
Winemaking
Recent vat room. Manual harvest in small crates. 100% destemming. Vinification in closed, stainless steel, temperature-controlled vats. Controlled vinification temperature 30-32°C, maximum color extraction. Maceration for twelve to fifteen days.
14 months ageing in Vat.

Eye
Deep purple color.
Nose
Combines power and suppleness, with aromas of slightly stewed red fruits and violet.
Palate
The peppery notes structure and balance the whole tasting, for an elegant Saint Joseph.

Pairing and Service
Chicken tagine with eggplant, duck breast, prime rib.
Serve at 17°C and enjoy now up until the next 8 years.
