Fermented in stainless steel tanks with natural yeasts; the wine is aged on its lees in concrete underground vats.
Cuvee Notes: “Granite” comes from a single 3 hectare plot of vines averaging 50 years old. With exceptionally low yields for the appellation, concentrated fruit is hand harvested (also a rarity in the Pays Nantais), pressed and transferred to fermentation tanks without the use of pumps. Fermentation occurs without the use of commercial yeast, and elevage occurs on the lees in subterranean concrete vats.
Tasting notes
Eye Bright ruby red. Nose An elegant nose with pronounced notes of mineral, flint, silex, and notes of citrus fruits and oyster shells. Palate The attack is sharp and straight, the mouth crystalline imparting a great purety, fresh with the ambiance of the sea; mouth slim, fleshy and complex, very salty notes and notes of chalk and citrus fruits.
