A great classic of the Larzac always at the highest level!

Vineyard
The Syrah and Grenache vines are planted on a limestone plateau (lake limestone) facing north. In Aniane, the land being oriented due south and northwest, we have planted Mourvèdre (rounded pebbles like Chateauneuf-du-Pape)

Vinification
The different grape varieties are vinified separately. Harvest previously destemmed and crushed. Vinification on indigenous yeasts. Maceration of approximately 30 days depending on the vintage. Exclusive punching down of the three grape varieties.

Aging
Aged in oak barrels of one wine, two wines or more for 24 months. Blending of the three grape varieties two months before bottling. Bottled in Lune Vieille, unfiltered wine.

Eye
Dark ruby turning orange on the rim with age.
Nose
An explosion of aromas and precision, with complex notes of muscade, spices, black fruit and ash.
Palate
A Summit of Mediterranean flavors, a great fineness of tannins, a finale tight still but lavish in its aromas. Alive and young still with in a great minty freshness. The texture of mouth remains closed and the spice persistance shows.
