Clayey Limestone – Kimmeridgian  : Limestone soil, alternating layers of very compact limestone and very soft clayey marl containing fossilized marine organisms (tiny oysters, called Exogyra virgula).

Tasting notes

Eye
The wine is a lovely pale straw yellow
Nose
Fresh, fruity aromatics are anchored by a deep, pleasing nuttiness.
Palate
Each sip is dense and mineral, with a brisk, totally Chablisien finish.

Service and Pairing
Serving temperature between 9 to 12°
This wine is predisposed to many associations, including hot oysters and fish in sauce. The BEAUROY will be wonderful with andouillettes and snails, among other things.
Let the wine age up to 5 to 10 years.

Domaine Mosnier

Sylvain settled in 1978 at the age of 34, after having been a mechanics teacher, his grandfather and great-grandfather were already winegrowers and wine merchants in Poilly/s/serein.
Domaine Mosnier has been an independant domaine for more than 30 years.
The wines are produced on Portland or Kimmeridgian soils and come in 4 different appellations:
