Viticulture

Appelation: I.G. Los Chacayes, Tunuyán, Uco Valley, Mendoza, Argentina.
Elevation: 1,300 meters above sea level.
Vine Age: Over 10 years.
Yield: Low yield, producing fewer than 7,000 bottles per hectare.
Farming: 100% Organically farmed (Certified by LETIS). Hand-picked grapes in 17 kg crates.

Vinification & Aging

Pre-fermentation: Cold pre-fermentative carbonic maceration for 5 days.
Fermentation: Vinified in concrete eggs and stainless steel tanks utilizing gentle punch-downs (pisoneos) and pump-overs (remontajes), followed by post-fermentative maceration on the skins.
Aging: 30% matured in French oak barrels for approximately 6 months; 70% kept in stainless steel vats.

Intense aromas of local Los Chacayes wild herbs (thyme and jarilla) layered with fresh red forest fruits like strawberries, plums, and raspberries.
Palate
Medium-bodied and highly approachable, showing a vibrant, crunchy, and juicy texture. Fine mineral tannins deliver a focused structure with an energizing, fresh finish.
