Niki Hills Chardonnay is Modern, Clean and Elegant. A Chardonnay made in this style is a Chardonnay which wants to compete on the global level. The wine has a reductive-ness reminiscent of a New Zealand Chardonnay, or New-School Burgundy.
Winemaking
60% destemmed, 1 month skin contact.
10% whole bunch press. Tank fermentation.
30% whole bunch press. 8 months in barrels. Six months in tanks.
These 3 methods were used and blended in order to create the layers to this wine.
Tasting notes
Eye Pale yellow with greenish tints.
Nose Nuances of pear, green apple, lime peel, unsweetened custard and lime. Palate Compact, refined wine with a smart mouthfeel, clear acidity and minerality with a hint of saltiness.
