More about this wine
More about this wine
Steep 7-hectare south/southeast-facing amphitheater; red schist outcroppings, decomposed mica-schist, and quartz over steep slopes above the Loire.
100% Chenin Blanc (40–80+ year-old vines).
Winemaking and Ageing
Hand-picked in multiple passes for botrytized/ultra-ripe fruit; fermented with indigenous yeasts in oak barrels, no temperature control.
Aged ~12 months in neutral 500L French oak barrels and demi-muids.
Tasting notes
Tasting notes
Eye
Deep golden-amber hue with brilliant clarity and high viscosity.
Nose
Immensely complex with yellow plum, dried quince, orange peel, candied ginger, and beeswax, layered over notes of fresh tobacco, dried chamomile, and crushed-rock minerality.
Palate
Full-bodied, broad, and unctuous. Exceptional weight, texture, and phenolics driven by natural botrytis and low yields, balanced by a fierce, driving mineral acidity and a touch of deliberate oxidative complexity. Long, warming, and structured with dry honey, bitter citrus peel, and intense, salty schist minerality.
Food Pairing and Service
Pair this monumental, power-packed Chenin Blanc with roasted lobster in saffron butter, pan-seared sweetbreads, or truffle-stuffed poultry. Its immense structure, rich texture, and intense mineral grip also stand up effortlessly to washed-rind cheeses and aged Comté.
Highly recommended to decant for 2 to 24 hours prior to serving. A legendary white that evolves gracefully over decades in the cellar.
Can be enjoyed early with extensive aeration, but will age graciously all the ay to 2050 onwards.

Vignobles de la Coulee de Serrant
Vignobles de la Coulée de Serrant is a legendary, biodynamically farmed Savennières estate in the Loire Valley, cultivated exclusively with Chenin Blanc across its own monopole appellation. First planted by Cistercian monks in 1130, its tiny 7-hectare steep vineyard yields iconic, immensely complex, and extraordinarily ageworthy dry whites with profound mineral intensity.
