Terroir
Intermediate altitude vineyards (~350 meters above sea level) featuring lacustrine clay-limestone slopes.
North-facing plots, allowing for slower ripening and preserved natural acidity.
Farming: 100% Organically and Biodynamically farmed (Demeter and Agriculture Biologique certified).
Harvest: Plot-by-plot selection (sélection parcellaire) of old vines. Hand-harvested with strict sorting both in the vineyard and on sorting tables at the cellar.

Vinification and Ageing
Pressing: Whole-bunch pressing under inert gas to prevent oxidation.
Fermentation: Utilizing native/indigenous yeasts. Vinification is executed at low temperatures entirely within oak barrels.
Aging: Aged for 8 to 10 months on its fine lees in a combination of new and one-wine French oak barrels, with regular stirring (bâtonnage) to build texture.
Finishing: Blended in a single final batch, followed by 4 to 12 months of bottle aging before release.
