A historic cuvée for the estate. Named for its signature brief overnight maceration (une nuit), which imparts an expressive, generous fruit character while retaining true Provence freshness.
Vinification
Mechanical harvesting.
Low temperature pressing, inerting of the presses.
Low temperature fermentation in stainless steel tanks.
Short maturation in temperature-controlled stainless steel tanks on fine lees to preserve fruit and freshness.
Drink now or in the next 1 to 2 years. Best enjoyed fresh and young.

Eye
Delicately pale salmon pink, clear and brilliant.
Nose
Highly expressive and refreshing. An aromatic bouquet dominated by zesty citrus (grapefruit) cleanly balanced by bright red fruits like wild strawberry and fresh cherry.
Palate
Beautifully round, fruity, and generous on the mid-palate. It shows a slightly more structured, gourmand mouthfeel than the entry-level Lisa Rosé, finishing with a crisp, lively, and vibrant freshness.
Service and Pairing
Serve well-chilled at 10°C.
Highly versatile at the table. It pairs brilliantly with octopus carpaccio with olive oil and lime, traditional anchovy and sardine pissaladière, Mediterranean prawns in tempura with a lemongrass dipping sauce, sea bream ceviche, or a classic Provençal ratatouille.
