Terroir
Sourced from the Hautes Terrasses (highest terraces of the estate), situated between 350 and 400 meters elevation. The soils are predominantly clay-limestone with prominent parent rock outcrops.
Farming: 100% Certified Organic (Agriculture Biologique) and Biodynamic (Demeter certified).
Harvest: Plot-by-plot selection (sélection parcellaire) of the oldest vines on the estate. Exclusively hand-harvested with strict sorting both in the vineyard and on sorting tables at the cellar.

Vinification and Ageing
Pressing: Immediate whole-bunch pressing to maintain a pale color and limit tannin extraction.
Fermentation: Vinified using native/indigenous yeasts at controlled low temperatures to preserve delicate primary aromas.
Aging: Aged partially in stainless steel tanks on its fine lees to develop mid-palate texture and roundness while retaining immaculate fruit precision.

Serve at 10°C to 12°C.

A gastronomically structured rosé built for food. It pairs exceptionally well with grilled red mullet over eggplant confit, warm octopus salad with capers, monkfish skewers with a pine nut reduction, or a lean pork filet mignon roasted with fresh apricots.
