As something quite special, Decelle & Fils Chorey les Beaune "Les Champs Piétant" is a white wine from the commune of Chorey-les-Beaune in Burgundy. It is made from 100% Chardonnay. The municipality's total 134ha fields are planted with 96% Pinot Noir, so only approximately 5ha is dedicated to Chardonnay. Of these, Decelle owns just 0.23ha and the production is extremely small. A bit of a specialty. The plot is called Les Champs-Piétant and is located quite close to the town of Beaune immediately to the north. The soil has a high clay content, the field is flat and lies 220 meters above sea level. The harvest takes place by hand and the wine ages for 10-14 months in French oak, of which approximately 10% is new oak.

Tasting notes

Eye
Lemon gold with a slight greenish tinge.
Nose
The scent of white Burgundy as our mother made it. White flowers and lemongrass mingle with fresh citrus notes, peach and toasted notes from barrel and yeast.
Palate
Powerful white Burgundy, bursting with excess. Its richness is balanced by a crisp freshness that melds with fruit, barrel and aging in a beautiful, long aftertaste.

Serving and Pairing
Enjoy it chilled as an aperitif, with fish and shellfish dishes, preferably white fish, and excellent with cream-based soups. Can develop over a number of years and becomes bolder and rounder with notes of ripe fruit and hazelnut.
